HOW TO GET LOCAL CATERERS TO USE MORE LOCAL FOOD?

~ create a local currency and tax businesses who don't use local produce & give tax breaks to those that do to keep prices lower so people are encouraged to eat it

~ Menu Choices: which are purely local - can make them a special feature, run promotions in newspapers, mags, internet etc.. Create a new trend and get people to come especially for these dishes.

~ Do a survey of who wants to eat local food and give the results to caterers.

~ several families requiring local/organic deciding on a night to eat out and giving enough notice to the people cooking the food.

~ Business open once a week to serve local organic dinner

Find out what food the local cafe/restaurants need >> producers to adopt
Demonstrate demand - survey of who is eating out/ restaurants run their own survey
~ Possibility of a local dish restaurants create and for which they charge a premium
~ What has Sharpthorne cafe done?
~ Java & Jazz buys cakes from locals
